Housed in a 16th-century palazzo backing onto Ostuni's cathedral, La Sommità (the summit) is a stylish and charming hotel boasting a Michelin starred restaurant and relaxed, pared-down rooms. It is located on the top of the hill of Ostuni and offers phenomenal views of the surrounding countrysider. The building has been exquisitely restored: its stone walls and vaulted ceilings teamed with limestone floors and thin-framed windows. Outside, there are terraces shaded by citrus trees and palms; inside are nine rooms furnished in white and ecru linens, with pale-wood furniture and flat-screen TVs. There is a spa offering massages, various treatments and a hammam. The antique lounges and great loggias are dedicated to reading and to breakfasts and during the afternoon, relaxation is “seasoned” by just-baked sweets and pastries, chocolate, teas and tisanes. A staircase dug from stone leads to three antique tanks, which were once used for collecting oil, and are now used for wine tastings.
