Hidden among the streets of Surry Hills, Crystalbrook Albion occupies a former 19th-century convent whose Victorian Gothic architecture still forms the backbone of the hotel. Surrounded by planting and overlooking the rooftops and church spires of Surry Hills, it is equally suited to morning coffee and a glass of wine as the light begins to disappear over Sydney.
