A Heritage Icon, Reborn
Originally established in 1890, The Grand National Hotel was a beloved neighborhood pub in Paddington, Sydney. In 2018, building owner George Penklis approached acclaimed chef Josh Niland and his wife Julie with the idea of transforming the space. After years of meticulous planning and restoration, the Nilands unveiled their first hotel venture on January 31, 2025, seamlessly blending the building’s historic charm with contemporary elegance.
Culinary Excellence Meets Boutique Luxury
At the heart of the hotel lies Saint Peter, the Nilands’ renowned seafood restaurant. Celebrated for its sustainable, whole-fish philosophy, Saint Peter offers guests an immersive dining experience. The restaurant’s innovative approach has earned it accolades, including three hats in the Good Food Guide and recognition as New South Wales Restaurant of the Year 2024.
Thoughtful Design and Artisanal Touches
The hotel’s 14 rooms, designed by Sydney-based Studio Aquilo, pay homage to the building’s Victorian heritage while incorporating modern Australian aesthetics. Each room features bespoke velvet headboards, luxurious Bonny duvets, and unique art pieces curated by Olsen Gallery, including works by Ken Done. Notably, the Nilands’ commitment to sustainability extends beyond the kitchen. Guests will find fish-fat candles and ceramics crafted from fish bones, reflecting the restaurant’s zero-waste ethos.
An Unforgettable Breakfast Experience
Exclusive to hotel guests, the breakfast at The Grand National is a culinary event in itself. The three-course menu, crafted by the Saint Peter team, features dishes like marron scrambled eggs with hollandaise and artistically presented seasonal fruits. This breakfast experience has been lauded as one of the finest in the world.
Personalized Service and Amenities
Guests are welcomed with thoughtful touches, including handwritten notes and gourmet welcome snacks. Each room is equipped with amenities such as Aesop toiletries, Dyson hairdryers, and complimentary (non-alcoholic) mini-bars stocked with artisanal treats.
DNA Hotels Verdict
The Grand National Hotel is a masterstroke of heritage revival, culinary brilliance, and intimate boutique luxury. A stay here is more than accommodation—it’s an immersion into Josh and Julie Niland’s world of craft, care, sustainability, and unforgettable flavor.
