Here, the menu changes with the markets and the seasons—wood-grilled fish, lobster taglioni, wild mushrooms, and just-picked vegetables from nearby farms. “Matsalen is about cooking with intention but without ego,” says Agrell, and you can taste that relaxed confidence in every bite. The atmosphere is as thoughtfully composed as the food: candlelight flickers against stone walls, soft music hums under the conversations, and the courtyard’s glass roof lets in the northern light by day and the stars by night.
